Avocado Egg Wrap

This breakfast wrap is quick to make and will leave you full with energy all morning long. I like to use the carb balance tortillas for extra fiber.


Serves: 1


Ingredients:

  • Tortilla: 1 carb balance tortilla

  • Eggs: 1 whole egg and 1 egg white

  • Cheddar Cheese: 1/8 cup, shredded

  • Avocado : 1/2 avocado, diced

  • Salsa: 2 tablespoons

  • Salt: to taste

  • Black Pepper: to taste


Instructions:

  1. Heat Tortilla:

    • Heat your tortilla in a pan over medium heat until soft and warm to the touch.

    • While that's heating up, dice your avocado.

  2. Scramble Eggs:

    • Use the same pan to quickly scramble together 1 whole egg and 1 egg white.

    • I like to use 1 whole egg and 1 egg white to get more protein without doubling the cholesterol. The yolk is full of vitamins, so we want to keep one in there.

  3. Assemble Wrap:

    • Once the eggs are cooked, top the tortilla with the eggs, salt, pepper, cheddar cheese, and diced avocado.

    • Top with 2 tbsp. of your favorite clean salsa.

  4. Enjoy!
