Chicken Sheet Pan Nachos

Sheet Pan Nachos are a staple in our house. This specific recipe uses chicken, but you can really use whatever you have. This is a great recipe for using up whatever is left in the fridge before it goes bad.
Serves: 2

Ingredients:
Tortilla chips: about 4 cups or 1/2 large bag
Refried beans: 1/2 can, about 8 oz
Chopped grilled chicken: 1 cup
Shredded cheese: 2 cups, cheddar or a Mexican blend
Tomato: 1/2 cup, diced
Red onion: 1/2 cup, diced
Sliced Pickled Jalapenos: 1/2 cup; adjust to taste
Fresh cilantro: 1/4 cup, chopped
Lemon or lime juice: 1-2 tablespoons, to taste
Sour Cream, Salsa and/or Guacamole: for serving
Instructions:
Preheat the Oven: Preheat your oven to 350°F.
Prepare the Sheet Pan: Line a large baking sheet with parchment paper or lightly grease it.
Prepare the Toppings:
Dice the tomatoes
Finely chop the red onion.
Grab the sliced jalapenos from the jar and chop if desired (remove seeds for less heat).
Chop the cilantro and cut the lemon or lime into wedges.
Layer the Chips: Spread the tortilla chips evenly over the baking sheet in a single layer.
Add Refried Beans: Warm the refried beans slightly to make them easier to spread. Dollop spoonfuls of beans over the chips, then gently spread them with the back of the spoon.
Add Cheese: Sprinkle the shredded cheese evenly over the top of the chips and beans.
Add Chicken: Scatter the chopped grilled chicken evenly over the chips, beans and cheese.
Bake: Place the baking sheet in the oven and bake for about 10-15 minutes, or until the cheese is melted and bubbly.
Add Toppings: Immediately sprinkle the diced tomatoes, red onion, jalapenos, and cilantro over the top.
Finish with Cilantro and Citrus: Once the nachos are done baking, remove them from the oven. Top with the cilantro and drizzle the lemon or lime juice over the nachos for a fresh burst of flavor.
Serve: Serve your sheet pan nachos hot, right out of the oven. You can add sour cream, guacamole, or salsa on the side for extra deliciousness if you like!
