J Mike's Cold Cut Salad

This protein packed salad was inspired by Jersey Mike's Bowls. With turkey provolone pinwheels, and as many veggies you can add, this is a healthy lunch option that will keep you going for the rest of the afternoon. The dressing is really clean, using Apple Cider Vinegar which is great for gut health.


Serves: 1


Ingredients:

  • Iceberg Lettuce: 2-3 large leaves, chopped

  • Deli Turkey: 1-2 slices

  • Provolone Cheese: 1-2 slices

  • Red Onion: 2-3 thin slices, chopped

  • Tomato: 1/4 small, diced

  • Pepperoncini: 2-3, diced

  • Olive Oil: 1 tablespoon

  • Apple Cider Vinegar: 1 teaspoon

  • Fresh Lemon Juice: 1 teaspoon

  • Salt: to taste

  • Black Pepper: to taste

  • Oregano: a pinch

  • Parmesan Cheese: a few shakes


Instructions:

  1. Prepare the Vegetables:

    • Chop the iceberg lettuce into bite-sized pieces and place it in a salad bowl.

    • Dice the tomato, red onion, and pepperoncini.

  2. Assemble the Salad:

    • Add the diced tomato, red onion, and pepperoncini to the bowl with the lettuce.

    • Place 1 slice of turkey over 1 slice of provolone cheese. Roll the deli turkey and provolone cheese into a log, and slice into pinwheels. Place the pinwheels on top of the salad.

  3. Dress and Season the Salad:

    • Drizzle the olive oil, apple cider vinegar, and fresh lemon juice over the salad.

    • Season with salt, black pepper, parmesan cheese, and a pinch of oregano.

    • Toss gently to coat all the ingredients.

  4. Enjoy:

    • Serve immediately and enjoy!
