J Mike's Cold Cut Salad

This protein packed salad was inspired by Jersey Mike's Bowls. With turkey provolone pinwheels, and as many veggies you can add, this is a healthy lunch option that will keep you going for the rest of the afternoon. The dressing is really clean, using Apple Cider Vinegar which is great for gut health.
Serves: 1

Ingredients:
Iceberg Lettuce: 2-3 large leaves, chopped
Deli Turkey: 1-2 slices
Provolone Cheese: 1-2 slices
Red Onion: 2-3 thin slices, chopped
Tomato: 1/4 small, diced
Pepperoncini: 2-3, diced
Olive Oil: 1 tablespoon
Apple Cider Vinegar: 1 teaspoon
Fresh Lemon Juice: 1 teaspoon
Salt: to taste
Black Pepper: to taste
Oregano: a pinch
Parmesan Cheese: a few shakes
Instructions:
Prepare the Vegetables:
Chop the iceberg lettuce into bite-sized pieces and place it in a salad bowl.
Dice the tomato, red onion, and pepperoncini.
Assemble the Salad:
Add the diced tomato, red onion, and pepperoncini to the bowl with the lettuce.
Place 1 slice of turkey over 1 slice of provolone cheese. Roll the deli turkey and provolone cheese into a log, and slice into pinwheels. Place the pinwheels on top of the salad.
Dress and Season the Salad:
Drizzle the olive oil, apple cider vinegar, and fresh lemon juice over the salad.
Season with salt, black pepper, parmesan cheese, and a pinch of oregano.
Toss gently to coat all the ingredients.
Enjoy:
Serve immediately and enjoy!
